Tasting Note
Vibrant notes of quince, pear, and pineapple lead to a crisp palate of white peach, green apple, and citrus. Balanced acidity and minerality give structure, while a medium-bodied mouthfeel adds richness. Paired with Rossini’s “Non più mesta”, the wine’s lively, playful character mirrors the aria’s joyful, graceful melody.
Winemakers Note
The grapes originate from 100% dry-farmed, old bush vines in Agter-Paarl, and are grown on Malmesbury Shale soils that lend minerality and fresh acidity. The 2024 vintage had healthy, rich canopies with relatively low yields and excellent quality. Hand-harvested grapes, using only free-run juice, were fermented in stainless steel at 13°C for 20 days and aged 3 months on gross lees for added richness. Fully un-oaked, the wine preserves its vibrant, crisp fruit character and was fined and filtered before bottling.

Pair with light white fish and parsley or pork. Alternatively, soft goats cheese topped with nuts makes an excellent vegetarian option.
