Story
DeMorgenzon uses music to better their vine growth. To quote the winemaker, “We, at DeMorgenzon, believe that music can influence the growth of a vine and the fruit it bears. We have played Baroque, and early Classical, music to our growing vines in the vineyard, in the winery and in the cellar all day, and every day, since 2009”
Tasting Notes
With notes of lemon zest, snap pea, kiwi, and winter melon, this Sauvignon Blanc is light yet composed — bright and refreshing, but with unexpected structure. A fitting musical companion is “Una voce poco fa” from Rossini’s Il Barbiere di Siviglia. This aria sparkles with energy and precision, much like the wine’s citrus zip and clean finish. Its playful yet controlled character mirrors the wine’s balance — vibrant, refined, and effortlessly charming.
Food Pairing
Pairs well with fresh summer salads and lean proteins such as white fish or succulent chicken.
Winemaker’s Note
Grapes were gently destemmed and lightly pressed with minimal oxygen exposure. After cold settling overnight without enzymes, the juice was inoculated with selected yeasts to preserve fruit purity. A long, cool fermentation was followed by extended lees contact and periodic stirring to build texture and integrate flavour.
